Twas the Night Before Thanksgiving

‘Twas the night before Thanksgiving and all west and east
This creature was stirring, preparing a feast
The turkey was brining in the fridge with care
In hopes the bird with taste light as air
The cookies were baking all snug in the stove
with flavors of pumpkin with cinnamon and clove.

I’m pretty much on my own this year preparing for and cooking Thanksgiving dinner. So, on this night before Thanksgiving, I’m doing some prep work.

The American Heirloom Collection Turkey I pre-ordered from Whole Foods came with a couple of feathers in it. Those had to be plucked. Don’t buy a turkey with feathers in it. Oh, and it’s an 18-pound bird…for four people. But I wanted a fancy turkey and, apparently, fancy turkeys only come in massive sizes.

Tonight I made the buttermilk brine and set the turkey to soak overnight…

I also ice baked pumpkin spice cookies (get the recipe here)…but my family has already eaten almost all of them… I guess they’re that good.

    i baked four pies and made half a salad.
    more like i burnt four pies and made a salad this morning that my coworkers ate half of.
