Pan-Roasted Chicken with Prosciutto, Rosemary, and Lemon

My Chicken: Pan-Roasted Chicken with Prosciutto, Rosemary, and Lemon

Someday I will meet a man and I will make this pan-roasted chicken with prosciutto, rosemary, and lemon for him and he will fall in love with me.

It’s just that kind of dish.

Pan-Roasted Chicken with Prosciutto, Rosemary, and Lemon

If a way to a man’s heart is through food than this chicken will leave his heart warm and his stomach full. It’s moist but crispy, tangy with lemon and smokey with prosciutto. The chicken recipe balances on the line between being simple to make and being just complicated enough to be impressive. And it tastes absolutely amazing.

So, for now, I’ll make a single quarter leg of a chicken for myself and I’ll make some tender roasted potatoes to go on the side and I’ll try to remember not to touch the pan after I take it out of the oven so I don’t burn my hand and I’ll eat it on the floor of my apartment, alone, in front of the TV, and I’ll wash it down with some strawberry lemonade that is still full of sugar but not full of corn syrup. And it will all taste absolutely amazing.

Hi, I'm Val. I spent most of my 20s in a standstill, unable to pick which path in life I wanted to take. I wanted the nomadic life of a traveler but also wanted the husband, the condo, and the kitten. Unable to decide which life I wanted more, I did nothing. When I turned 30 I’d had enough of putting my life on hold and decided to start “choosing my figs.” So, I quit my job, bought a one-way ticket to Europe, and traveled for three years. Now I'm back in Chicago, decorating my apartment in all the teal, petting my cats, and planning my next adventure.
