Goal number 87 on my incomplete list of 1,000 things to do in my life: EAT VEGETARIAN FOR A MONTH I chose this as a goal for a variety of reasons. 1. Last Wednesday I stopped by Chelsa's to watch the last Stanley Cup game. Blackhawks won! And we ate turkey sloppy joes and Blackhawks cookies. 2. Someday I will meet a man and I will make this pan-roasted chicken with prosciutto, rosemary, and lemon for him and he will fall in love with me. It's just that kind of dish. If a way to a man's heart is through food than this chicken will leave his heart warm and his stomach full. It's moist but crispy, tangy with lemon and smokey with prosciutto.
